Soft Oatmeal Cookies w/ Cranberries
- 1/2 cup butter
- 3/4 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 3/4 cup flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cup quick cooking oats
- 1/2 to 1 cup dried cranberries
- 1/2 cup toasted walnuts (optional)
- 1/2 cup toasted sunflower seeds (optional)
INSTRUCTIONS
- Toast nuts and set aside.
- Combine dry ingredients and set aside.
- Cream butter and brown sugar together with a mixer until fluffy, about 5 minutes. Add in eggs one at a time, mixing after each addition. Add in vanilla. Mix again.
- Add dry ingredients to butter mixture, one cup at a time, mixing well, until all added.
- Mix in nuts and cranberries.
- Drop by spoonfuls onto a lightly greased or parchment lined cookie sheet. (I use a medium cookie scoop)
- Bake in a preheated 350 degree oven for 10-12 minutes.
