Soft Oatmeal Cookies w/ Cranberries
  • 1/2 cup butter
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cup quick cooking oats
  • 1/2 to 1 cup dried cranberries
  • 1/2 cup toasted walnuts (optional)
  • 1/2 cup toasted sunflower seeds (optional)

 

INSTRUCTIONS

  1. Toast nuts and set aside.
  2. Combine dry ingredients and set aside.
  3. Cream butter and brown sugar together with a mixer until fluffy, about 5 minutes. Add in eggs one at a time, mixing after each addition. Add in vanilla. Mix again.
  4. Add dry ingredients to butter mixture, one cup at a time, mixing well, until all added.
  5. Mix in nuts and cranberries.
  6. Drop by spoonfuls onto a lightly greased or parchment lined cookie sheet. (I use a medium cookie scoop)
  7. Bake in a preheated 350 degree oven for 10-12 minutes.
