Pecan Pumpkin Pie

For pumpkin layer:

  • 1 cup pumpkin puree
  • 1/3 cup granulated sugar
  • 1 large egg
  • 1 teaspoon pumpkin pie spice (to make your own blend, see below)

For pecan layer:

  • 2/3 cup light corn syrup
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 3 Tbsp butter, melted
  • 1/2 tsp vanilla extract
  • 1 cup pecan halves

1 pie shell (homemade or store bought)

Preheat oven to 350 degrees.

For the pumpkin layer:
Combine pumpkin, sugar, egg and spice together in a medium bowl. Stir well. Spread over the bottom of pie shell.

For the pecan layer:
Combine corn syrup, sugar, eggs, butter and vanilla extract in same bowl. Stir in nuts. Spoon over pumpkin layer. Bake for 50 minutes or until knife inserted in center comes out clean. Cool on wire rack.

Pumpkin pie spice:

  • 1/2 tsp cinnamon
  • 1/4 tsp ginger
  • 1/8 tsp cloves
  • 1/8 tsp nutmeg
