Iced Oatmeal Cake Cookies

INGREDIENTS

  • 1/2 cup butter
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/4 cup flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup quick cooking oats

FOR ICING

  • 1 cup powdered sugar
  • 2-3 teaspoons milk
  • 1/2 teaspoon vanilla extract

 

  1. Cream butter and brown sugar together with a mixer until fluffy, about 5 minutes. Add in eggs one at a time, mixing after each addition. Add in vanilla. Mix again.
  2. Combine dry ingredients. Just stir to blend, Add dry ingredients to butter mixture, one cup at a time, mixing well, until all added.
  3. Drop by spoonfuls onto a lightly greased or parchment lined cookie sheet. (I use a medium cookie scoop)
  4. Bake in a preheated 350 degree oven for 9-10 minutes. remove from oven and let cool on racks before icing.
  5. To make icing, stir together ingredients until no lumps remain. Place icing in a plastic bag, Cut the end of one bottom corner to create a small whole. Drizzle over cookies.
