Iced Oatmeal Cake Cookies
INGREDIENTS
- 1/2 cup butter
- 3/4 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/4 cup flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup quick cooking oats
FOR ICING
- 1 cup powdered sugar
- 2-3 teaspoons milk
- 1/2 teaspoon vanilla extract
- Cream butter and brown sugar together with a mixer until fluffy, about 5 minutes. Add in eggs one at a time, mixing after each addition. Add in vanilla. Mix again.
- Combine dry ingredients. Just stir to blend, Add dry ingredients to butter mixture, one cup at a time, mixing well, until all added.
- Drop by spoonfuls onto a lightly greased or parchment lined cookie sheet. (I use a medium cookie scoop)
- Bake in a preheated 350 degree oven for 9-10 minutes. remove from oven and let cool on racks before icing.
- To make icing, stir together ingredients until no lumps remain. Place icing in a plastic bag, Cut the end of one bottom corner to create a small whole. Drizzle over cookies.
