Leah’s Banana Bread

Bowl One (Dry):
- 2 1/2 c. all-purpose flour
- 1 1/4 c. sugar
- 1 tsp. baking soda
Bowl Two (Wet):
- 3-4 ripe bananas
- 1/2 c. milk
- 1 tsp Vanilla extract
- 2 eggs
- 1/4 c. melted butter
- 1/4 c. melted butter (separated)
Topping:
- Light coating of butter
- 3 tablespoons of sugar
- 1-2 tablespoons of cinnamon
Optional:
- Add a handful of fresh blueberries (if so, use a plain sugar topping w/o cinnamon)
- 1/2 c, of chopped walnuts
Preheat the oven to 350 F. Mix all dry ingredients into a bowl and stir until it is well blended (Bowl one).
Next, begin bowl two by smashing you’re bananas using a potato masher. Continue adding the milk, vanilla, eggs, and 1/4 c. of butter.
Once blended, combine the two mixtures by adding about 1/4 cup of wet mixture to dry, and stirring. Repeat until you run out of the wet mixture.
Use the 1/4 c. of butter you separated and evenly distribute to butter the insides of your loaf pans (it will be more than enough butter but it will help to keep bread soft). Next, evenly distribute the mixture into the pans. Bake at 350 F for 40-50 minutes. Once cooked, immediately pull loafs out onto a baking rack. Use a light coating of butter to make it sticky and lightly sprinkle the cinnamon/sugar topping on. Let them sit for 5-10 minutes to cool. Enjoy!!!
