Asian Cole Slaw

Serves 8 people.
- 1 package (3 oz. size) chicken flavored raman noodles
- 1 package cole slaw mix (8.5 oz size) or 1 small cabbage, thinly sliced
- 1/2 cup sliced almonds – toasted (optional)
- 1/2 cup sunflower kernels – toasted
- 4 green onions – chopped
Dressing:
- 3 tablespoons sugar
- 6 tablespoons vegetable oil
- 3 tablespoons white vinegar
- 1 teaspoon soy sauce (optional)
- 1/2 teaspoon sesame oil (optional)
- Flavor packet from soup mix
Toast the sunflowers seeds and almonds and set aside to cool.
Remove flavor packets from soup mix, and reserve for later use; crush noodles. Place noodles in bottom of a large bowl. Top with slaw mix; sprinkle with the almonds, sunflower kernels, and chopped green onions. NOTE: You can also add thinly sliced carrots or sweet peppers to make it extra yummy.
Whisk together ingredients for the dressing.
Pour over slaw. Cover and chill 24 hours. Toss before serving.
