Apple Cake

Apple Cake
  • 2 c. flour
  • 2 c. sugar
  • 2 t baking soda
  • 1 t cinnamon
  • 1/2 t nutmeg
  • 1/2 t salt
  • 1/2 c butter, softened
  • 2 eggs
  • 4 cups apples, diced
  • 1/2 c walnuts
  • 1/4 c raisins (rehydrated in 2 TBSP water)

Preheat oven to 350 degrees. Lightly grease and flour one 9×13 inch cake pan or bundt pan.

Sift dry ingredients together.

In mixing bowl, beat together butter, eggs, apples, walnut & raisins.

Add dry ingerdients wet mixture in mixing bowl. Beat until combined (it will be thick).

Pour into pan and bake for 45 to 55 minutes or until a toothpick inserted into center of cake comes out clean.
